TYPICAL MENU ITEMS
While our menus do vary from summer to summer with chef preferences and management decisions that adapt to eating trends and habits, the following are the general menu items that are typical for Lake Mancos Ranch.
BREAKFAST: Breakfast is served buffet style so you may help yourself to a variety of items. Four or five cold cereals are available and most mornings offer a hot cereal. Breads, bagels and English muffins are set out for you to toast. Each morning you will be tempted with a homemade muffin, coffee cake or cinnamon roll. Fruits, juice and yogurt are daily offerings. Hearty, hot breakfast items may include bacon, ham and sausage, eggs, biscuits and gravy, pancakes, hash brown potatoes and French toast.
LUNCH: Lunch is also served buffet style so that a sandwich bar (breads, cheeses & cold cuts) can be presented along with the salad bar and a hot entrée. Hot entrees may include tacos, spaghetti, lasagna, enchiladas, stews, grilled hamburgers or veggie burgers, other hot sandwiches or homemade soups. Homemade desserts may include carrot cake, chocolate bar cookies, applesauce cake or gingerbread.
DINNER: Dinner is served “family style.” It will usually include two entrees (a red meat and a white meat or fish), a potato or starch dish, two vegetables or side dishes, a complete salad bar (or occasionally a “specialty salad”), a homemade bread and freshly made dessert. Desserts are made in our own kitchen and can run the gamut from éclairs to chocolate peanut butter pie.
Dinner entrees may include beef pot roast, oven fried chicken, roast loin of pork, fresh t rout from our pond, grilled steaks, prime rib roast, baked salmon, marinated chicken breast, roast turkey, or beef stroganoff. Vegetables and side dishes may include mashed potatoes and gravy, oven browned potato wedges, braised potatoes and carrots, garden rice, macaroni and cheese., sweet and sour brussel sprouts, corn on the cob, broccoli, cauliflower, creamed spinach. Our salad bar is available for most lunches and dinners. It will include greens, a vegetable selection, a couple of protein items (beans, cheeses, chopped eggs, etc.) and several toppings and dressings. Additional salad offerings such as potato salad, pasta salads, coleslaw or gelatin salads. Several of the dressings are homemade. “Bertie’s white bread” is a ranch tradition since 1967, but a variety of other breads will also come fresh from the ranch ovens.
CHILDREN AND TEENS: One night a week the Cowpokes, Buckaroos and Mavericks will have dinner with their rec. counselors and wranglers. They may have pizza or do a cookout with hot dogs and s’mores. Our “child friendly” dinner items include fish sticks, chicken nuggets, macaroni and cheese and rice krispy treats.
EXTRAS: Cookies, cookies, cookies! We have a bottomless cookie jar available at all times for our guests. Cowboy cookies are a specialty, but we also bake sugar cookies, peanut butters, chocolate crinkles, ginger cookies and lots more. Ice tea, lemonade, punch and coffee are always available for your “cookie break.”
